Irish Soda Bread

Makes 4 loaves
Preparation time: 20 minutes
Baking time: 50 minutes
Heat oven to 350 degrees. Remove finger rings and put in a safe place. Mix flour, sugar, baking powder, baking soda and salt together in a large bowl. Add raisins [Tip: boil raisins just until it comes to a boil, then strain - do this before adding to mixture]. Stir in eggs ad melted butter; add buttermilk.
Put your hands into the bowl and mix everything together until well combined. Spray or lightly butter 4 - 9 by 5-inch loaf pans. Pour mixture in and pat top down slightly but leave the dough bumpy on top.
Bake at 350 degrees 40 to 50 minutes. After 40 minutes check to see if a knife in the center comes out clean. If not check again every 5 minutes thereafter. Serve warm with butter, jelly and a cup of tea.
Note: Recipe can be tripled to make 12 loaves.
