Lemon-Walnut Dressing

Place 1/3 cup toasted walnuts in a blender or food processor and process until they are finely chopped. Add 2 tbsp water, lemon juice, mustard, honey or maple syrup, oil, and salt and pepper. Blend until dressing is creamy (if it's too thick to pour, thin it out by whisking or blending in up to 3 teaspoons of water, a teaspoon at a time). Serve dressing on the side.
