Caramelized Onion Tart

3oz Gruyere Cheese, shredded

2 large eggs and 1 beaten egg for basting.

3 oz heavy cream

1.5 tsp fresh thyme (if you have it) [alt. .5 tsp dried] (optional)

15 pastry puffs (this is approx.  could potentially make 20+ with the onion filling)

French mustard

 

Lay out the pastry puff sheets on a parchment lined baking sheet lined.  Add a little bit of mustard to the center of each pastry puff, spread around with a spoon.  Mix together cream, 2 eggs and cheese and add in onions.  Spoon a little bit into each puff, making sure not to overload it.  Wrap up each of the edges, to the center, sealing the tart and creating a square.  Baste the top of each tart with the remaining 1 egg. Whipe up any excess mixture. 

Place the tarts in the oven at 350º until golden brown.
