Caramelized Onions

6 large yellow onions, *very* thinly sliced
1 Tbsp butter
1/4 c olive oil
1 tsp sugar
1/2 tsp salt
pinch of pepper
Cook onions in deep frying pan over medium heat, stirring often until onions are caramelized 40-45 minutes. If onions start to brown to quickly, reduce heat. Taste and adjust seasoning.
