Pumpkin Bread Stuffing

Refer to pumpkin bread recipe.
6 cups Pumpkin Bread Cubed & Dried
3/4 pound sweet Pork or Turkey Sausage
1 cup Green Onion or 1/2 cup shallots
1 cup chopped celery
8 Tbs. butter or 1 stick
2 cups sliced mushrooms
1/2 cup chicken or vegetable broth
2 beaten eggs
1 tsp bells seasoning or 1 tsp of a Pumpkin Pie Spice
2 tablespoons chopped fresh parsley
1 Cup toasted chopped pecans or Walnuts
1 Cup Chopped Sweeten Crannraisins
1 Cup Raisins
Spread Pumpkin bread cubes on a baking sheet, and let dry overnight. Alternatively, heat in oven until dry at 250 degrees F. Brown Sausage in fry pan and set aside, discard grease. Melt butter in a large pan over medium heat an Add celery and onions cook for about 10 minutes. Add mushrooms and cook stirring for about 8 minutes. Put Pumpkin bread cubes in large mixing bowl and add diced sausage and cooked vegetables. Mix in broth to moisten. Fold in remaining igerdents Transfer to prepared dish. Cover with foil shiny side down. Bake, covered, in a 325 degree F. oven for 40 to 45 minutes or until hot. Internal temperature of the stuffing should reach 165 degrees. Remove Foil and cook for 10 minutes for a crusty top to stuffing.
